Charlie Palmer, a chef who helped define New American cooking, now oversees a bi-coastal empire of restaurants and … especially festive throughout the holidays … cocktail bars. In Manhattan, this means a rooftop lounge—Spyglass atop midtown’s Archer Hotel New York.

Creature comforts and inventive drinks draw guests from evening to late night throughout the year. But New Year’s Eve (Dec. 31) calls for a higher order of celebration. At Spyglass, the New Year’s Eve party (9 pm-1 am, $225 per person) features a premium open bar, passed hors d’oeuvres (by Charlie Palmer) and a DJ (www.eventbrite.com/e/spyglass-new-years-eve-tickets-38984845723). Partygoers who book dinner beforehand on the ground floor of Charlie Palmer Steak receive a 10 percent discount.

Every night of the year, Spyglass Rooftop Bar offers a warm welcome and a 22-story-high view of the city’s most famous Art Deco landmark, the Empire State Building. Guests sit at a gleaming black bar, at high tops looking over the skyscape or in an intimate nook with curving couches. Handsome bartenders serve a fine range of cocktails created by Charlie Palmer’s lead sommelier, Amanda Streibel. Consider the signature Archer Palmer (black tea-infused gin, lemon and simple syrup), the sophisticated Midtown Manhattan (rye, Aperol, bitters, grapefruit peel and a skewer of cherries) or the super-smooth Brazilian Winter (white rum, watermelon, lemon and sage). Also here: beers, wines by the glass, four “mocktails” and small plates like shrimp cocktail, dry-aged beef or Cuban sliders and tuna tacos.
