Witzigmann is an Austrian chef who worked in top restaurants around the world until he spent several years at Tantris in Munich, Germany. In the late 1970s, he opened his own restaurant in Munich called Aubergine. Witzigmann received three Michelin stars for this restaurant in 1978, becoming the first German-speaking chef to achieve this level of culinary recognition. In 1994, Witzigmann was honored with the title of “chef of the century” from the Gault Millau guide, becoming only one of four chefs to ever receive this prestigious award.

Bâtard’s Chef Markus Glocker is also Austrian and, after culinary school, he too worked in top kitchens all over the world, including a kitchen run by Witzigmann in Berlin. Glocker considers Witzigmann one of his most revered mentors, which is why he is honoring this notable chef on his 75th birthday.

This seven-day celebration (June 29 & 30; July 1, 2, 5, 6, 7) features the following menu:

-Beetroot gelée with caviar, sour cream and celery

-Roasted langoustine (European prawns) with asparagus and passion fruit vinaigrette

-Heaven & Earth of foie gras with Calvados (an apple-based brandy from Normandy), apple and black truffle

-Lamb loin wrapped in aubergine with baumkuchen (a layered German sponge cake baked on a spit), lemon and red pepper jus.

-Fresh strawberries with caramelized puff pastry, vanilla and champagne ice cream

 -Mignardises (bite-sized pastries and sweets)

Bâtard’s regular menu will be available over those seven evenings as well.
