Jess Pryles Teams Up with Pig Beach on Thursday for a Meat Lovers' Summer Solstice

Celebrate the first day of summer in carnivorous fashion at Pig Beach 480 Union St., btw Nevins & Bond sts., in Gowanus, Brooklyn, on Thursday, June 21, from 6:30 to 9:00 pm.

All evening, Austin, Texas-based, Australian-born meat expert, chef, TV host and author, Jess Pryles, of "Hardcore Carnivore: Cook Meat Like You Mean It" will be cooking and demonstrating for guests how to prepare her "certified angus beef smoked tri tip," served alongside her housemade specialty sauces "Texas caviar" and "jalapeño 'crack' sauce" for guests to compile their own DIY tacos.

Pryles is an authority on all-things-smoked-meat and is a regular on The Food Network, where she explains her revered meat-preparing techniques. She has grilled on The Today Show, taught culinary courses in the U.S., Australia, Sweden and Brazil (including at the Meat Science Department at Texas A&M University,) released her own line of internationally acclaimed sauces and rubs under the now-trademarked moniker "Hardcore Carnivore," and is the designer of an epymonyous model of the Pitts & Spitts smoker.

Pig Beach's own Matt Abdoo will be on hand helping guests help themselves to the restaurant's "smoked whole hog platter," served with mustard slaw.

@beautifulbooze barkeep Natalie Migliarini further bolsters the night's restaurant-industry-powerhouse lineup, slinging black rub-rimmed bourbon margaritas and "summer shrub" cocktails, made of gin, huckleberry shrub and Topo Chico.

The ticketed event costs $45 per person and includes the aforementioned dishes, two cocktails a copy of Jess Pryles' cookbook, plus... napkins. You'll need 'em.
